Street Corn Cucumber Salad



This is another recipe where you will add the amounts you want and make it to taste style.


Dressing:

Greek yogurt

Mayo

Chili powder

Cumin

Salt

Pepper

Garlic

Lime juice


To the Salad

Cucumber

Chicken

Corn
Red Onion

Cilantro



To Make:

  1. mix dressing (I would do about 1 cup greek yogurt to about 1/2 cup mayo)
  2. In a separate bowl, add in cut up chicken, cucumber, Corn Red onion and Cilantro.
  3. Top the dressing on the salad and mix together.



I will say we ate it straight like this but we also used tortilla chips and scooped it up like it was a dip. This will be massive to your desire taste and feel type of recipe!



My goal for this summer is to have as little cooking in the house as possible. I would really like to rely on cooking as much as possible on our black stone and just cutting/ mixing items in the house.  I know we will be going like crazy to can and even that I am trying to figure out ways to make it more of an outdoor sport. My goal is to have indoors be cool and a nice place to retreat for everyone.


So this salad is definitely one that will be on our go to make list. We tried it out at the beach and what we actually did was cooked off a lot of chicken one night and added it to the meals we needed. A nice way of batch cooking so it was easier during the week as well. With the chicken cooked, it was now cooled and we could just easily mix everything up.


You can eat it as is or you can eat it with tortilla chips too like a salsa. We also added this seasoning we got from Walmart. It was supposed to be for carne asada. It was so stinking delicious that we used that instead of the above seasonings. In all reality, add whatever seasoning you want and make top this off with some Cotija cheese.
