Sourdough Discard Pumpkin Muffins

 Sourdough Discard Pumpkin Muffins

 

Muffin Batter: 

1 & 1/2 cup all purpose flour 

1 & 1/2 teaspoon cinnamon 

1 teaspoon pumpkin pie spice 

1 teaspoon baking powder 

1/2 teaspoon baking soda

1/4 teaspoon salt 

1/3 cup vegetable oil 

1/2 cup brown sugar 

1/4 cup granulated sugar 

2 large eggs 

2 teaspoons vanilla extract 

1/2 cup sourdough discard 

1 cup pumpkin puree 

 

Streusel Topping 

 

1/2 cup all purpose flour 

1/4 cup brown sugar 

1/4 cup granulated sugar 

1 teaspoon ground cinnamon 

1/4 cup melted butter

 

 

  1. Preheat your oven to 375 degrees and prepare your muffin tin. Use paper liners or reusable liners. 
  2. In a large mixing bowl, add your sugars and oil. Mix well. 
  3. Add in your eggs and vanilla. Mix Well. 
  4. Add in your sourdough discard and pumpkin. Mix well. 
  5. Add in your spices, baking powder, baking soda, salt and flour. Mix well but do not over mix. 
  6. Scoop batter into the muffin tins. 
  7. In a separate bowl, mix up the topping! All you need to do is mix all the ingredients and sprinkle on top of your muffin batter that is inside of the muffin tins! 
  8. Bake in the oven for 25 minutes.
  9. Once cooked, let them cool and then enjoy!!! 

 

 

 

With this recipe, I personally did not make the streusel topping and left them without. It was still delicious. I also attempted to add cream cheese icing to the uncooked batter and I realize I will need to do a different recipe with that. So I think we will end up doing another recipe down the road of a pumpkin cheesecake or pumpkin cream cheese muffin. I have a hankering for it but what I was thinking may work didn’t. To which thats completely fine with me. I just wanted to try it out and see what would happen. 

 

Now I could top the cooled and cooked muffins with the icing if I wanted to but seeing as these were muffins, I wanted them to be a little more plain. When I think icing, I think cupcakes. I wanted these for a breakfast option for everyone in the house and icing isn’t needed. So we are just fine with how these turned out. 

 

Also I was tempted to make these into big muffins. So maybe double batch these and try that out next time. I’m not sure that I could get many with one batch of this recipe.
