Sourdough Discard Monster Cookies

 

1/2 cup butter, softened 

1/2 cup granulated sugar

1/2 cup light brown sugar 

1/2 cup Sunflower Butter (you can use any nut butter) 

1 cup Sourdough Discard 

1 large egg

2 tsp Vanilla Extract 

1 & 1/4 cup all purpose flour 

1 & 3/4 cup old fashioned rolled oats 

1/2 tsp sea salt 

1/2 tsp baking powder 

1/2 tsp baking soda 

1 cup Candy coated Chocolate (we use Trader Joes, you can use M&M’s) 

1 Cup Chocolate Chips (I prefer milk chocolate) 

 

 

  1. Preheat oven to 350 degrees Fahrenheit 
  2. Mix together the flour, oats, baking powder, baking soda and salt. Set aside. 
  3. In a separate bowl, mix butter and sugars together and let the mixture get creamy. About 2-3 minutes of mixing will do. 
  4. Add in Sunflower butter. Mix. Add in sourdough discard. Mix. Add in egg and vanilla extract. Mix. 
  5. Mix in dry ingredients into the wet mixture until fully combined. Then add in the candy coated chocolate and chocolate chips. 
  6. Scoop cookie mix out into desired cookie size and bake for 12-15 minutes. Allow to cool on the baking sheet for about 5 minutes before moving to a cooling rack for the remainder of the cooling time. 
  7. Store in a container and enjoy them! 

 

 

 

 

This recipe is my go to cookie recipe to have on hand at all times. I actually love mixing this up and putting 2 batches, shaped and into the freezer for the days we need a quick snack or for when company is coming over. With this method we just pull them out of the freezer, thaw and then bake them off in the oven as if I just mixed them up. If you’re like me, some days I have just a little extra time to mix things up but that doesn’t mean we actually need some baked good on hand. So I will take those times and mix the batter for the days when I don’t have the time to mix and bake off cookies but need something on hand. 

 

Like I am explaining, we love being able to have a freezer full of items on hand to use for when I don’t have a moment. With the restocks every week, this is another great recipe to mix up but put away for a different day. We all have those moments when we just don’t have enough time to do what we want and this will help out some. Im not saying in any way this method will change your life, nope. But it will give a tad bit of a helpful hand if you need it. Our freezer always has some dessert type snack made and ready for whenever we need the filler. Actually as I say this, I think I should take some time to check the current freezer stock. We may actually be low on some of the staples!!!
