Cookie Crisp Cereal

1/2 cup soft butter

2 tbsp sugar

1/4 cup brown sugar

1 egg

1/2 tsp vanilla extract

1 & 1/4 cup flour

1/2 tsp salt

1/2 tsp baking soda

1/4 cup mini chocolate chips

To Make:

  1. Preheat oven to 325 degrees and line a baking sheet with parchment paper.
  2. In a bowl, mix butter, sugar and brown sugar.
  3. Add in egg and vanilla.
  4. In a separate bowl, mix flour, salt and baking soda.
  5. Slowly add dry ingredients into wet ingredients.
  6. Add in mini chocolate chips.
  7. Put dough into a pipping bag and pipe out small cookie shapes. Remember this is cereal so we want smaller shapes!!! Smaller than dime sized. Tap the cookies top if they form a chocolate kiss shape.
  8. Place in the oven for 6-9 minutes. We are looking for a browning edge. Then remove from heat and let them cool completely on the baking sheet.
  9. Once they are finished, store in an air tight container!

Keep in mind while you pipe these out, you want to have smaller sizes. Now if you are like me, I do not recommend using a freezer bag to pipe this out. I busted that bag a few times. To the point I ended up just scooping and trying my best to make small cookies freehanded. Now I know I really do need to suck it up and need to purchase a piping bag for my smaller tips. This recipe just needs that to make them a true cookie crisp size.

This recipe is a recipe we made so I can take with us on a trip. I wont be surprised if my kids don’t actually eat them like cereal but that it ok. I will try this one again when we get back and we can see how they react then. Also I know, this could have just been cookies and dip them in milk. I truly don’t care. I am making this fun for my kids. We don’t get this type of cereal really ever, unless I am starving for it after an episode, so a little homemade splurge is always welcome here!!!
