Birthday Cake Granola Chunks
2 cups rolled oats
1 cup puffed rice cereal
1/2 almonds (I use walnuts or pecans)
1/4 cup butter, melted
1/4 cup maple syrup
1/2 cup honey
1 tsp vanilla extract
1 tsp almond extract ( I used maple extract)
1/2 tsp sea salt
1/4-1/2 cup sprinkles
To make:
- Preheat your oven to 325 degrees
- Add your oats, puffed rice cereal and almonds to a bowl.
- Add melted butter, maple syrup and honey.
- Add vanilla extract, almond extract and salt.
- Mix well
- Put granola mix onto a parchment paper lined baking sheet.
- Bake for about 15 minutes. You want a golden brown color but not burnt.
- Remove from heat, allow to cool completely before breaking into chunks and putting into an air tight container.

Ok, let me be honest, I have a granola addiction!!! You will see multiple different renditions of granola as I find them. I just love having granola on hand as we need it. We eat a lot of yogurt in this house hold but I also have been taking to cut up apple slices, topping with sunflower butter, granola, and chocolate chips. Now with this granola, Ill omit the chocolate. But it is absolutely delicious!!!
So this round we are making a birthday cake granola chunk. This one, what I like is we added the puffed rice cereal and it doesn’t have a “butter” base. So we aren’t using peanut butter or sunflower butter type “butters” as the base of flavoring/ keeping the granola more chunky. This one is more maple syrup and honey based and that gives it the sweetness that we want to make more of a birthday cake sweetness.
This one I will be using for yogurt and topping on anything I need a little crunch for when it comes to fruit!!!!
