Birthday Cake Granola Bars
4 cups quick cook oats (I used rolled oats)
3 cups puffed rice cereal
3/4 cups butter
3/4 cups honey
2/3 cups brown sugar
1/2 tsp salt
2 tsp vanilla extract
2 tsp almond extract (I used Maple extract instead)
1/2 cups rainbow Sprinkles (I have a link for this)
White chocolate wafers
To Make:
- Line a 9x13 baking dish with parchment paper and set aside. Now I personally actually used a baking sheet because I doubled this recipe. So this may be a preference moment.
- In a large bowl mix together the oats and rice cereal and set aside.
- In a sauce pan, melt butter, honey and brown sugar. Bring to a very slight boil, stirring frequently to dissolve sugar, then remove from heat.
- Add in salt, vanilla extract, and almond extract and stir to combine.
- Pour the liquid mixture over the oats and cereal and mix. Let this cool slightly and then add the sprinkles. Mix well.
- Press this mix into the prepared baking dish and allow to set for about 30minutes to an hour.
- Melt some chocolate and drizzle over the granola bars
- Cut into bars!!

Ah, another delicious trip snack. That is my goal with all of these. I want to find snacks my kids will love that we can take on trips too. My kids absolutely love Z bars and this isn’t replacing them but it is my hope that they will like these too. I made it all up and we haven’t had a chance to try them just yet. But there were “scraps” and my kids loved those!!! So that gives me hope!!
I am currently in a need to find snacks that the kids will love at home but will also love on trips. We have standard trips that we take each year and this is where we absolutely need to have the snacks on board. So the goal is to try this one out and then from there we will work on adding more options for the trips. Now if they like this one then we can keep in rotation. I probably wont try to make it for every trip but it will be an option. Now as I am saying this, it really sounds like a good idea to make a little list of go to trip snacks. Then add to it as I go!
