Banana Nut Muffin
4-6 large ripe bananas
3/4 cup vegetable oil
3 large eggs
2 tsp vanilla extract
3 cups all-purpose flour
1 & 1/4 cup cane sugar
1 & 1/2 tsp baking soda
1 & 1/2 tsp baking powder
1 tsp cinnamon
1/2 tsp salt
2 cups chopped nuts (We used walnut)
- Preheat oven to 350 degrees.
- In a bowl mash up the bananas. Add in the vegetable oil, eggs and vanilla extract. Mix
- Add to the banana mix your flour, sugar, baking soda, baking powder, cinnamon and salt. Mix.
- Add in the nut of choice and mix.
- Once everything is nicely incorporated, let the mixture rest for 15 minutes.
- Scoop mix into the muffin tin liners
- Bake for 12-15 minutes.
This is also another recipe that we have made and we ended up putting some into the freezer to use for a later date. Im not fully sure how they will do when they come out of the freezer but I don’t see how this will be any different than when I do the same with Zucchini bread. So I look forward to having this one on hand for a nice easy and quick pre breakfast option.
If you remember from before we said about how we like the idea of having some quick options on hand for the kids to eat while I work on making a nice breakfast for them. Even this on the side of yogurt would be a good idea. But either way, this will be something to have on hand to give to the kids so we can make it an easy fix for our mornings. My kids are the chill morning vibe kinda kids so this will be good for their wake up time.
We also liked these for the idea of travel days. I’m not sure what everyone else likes to do but I love an easy grab option for the breakfast part of the travel. I don’t have the energy to make breakfast before we head out on the trip. We usually leave early in the morning and travel mornings are rough on the Cyclical Vomiting. So this combo is perfect!
