10 medium apples, quartered
1/2 cup packed brown sugar
4 cinnamon sticks
1 tablespoon ground allspice
- In a medium stock pot, quarter apples and place in stock pot. (Seeds and core included)
- Add in brown sugar, cinnamon sticks and allspice. Mix.
- Cover apples with water!
- Being to a boil, uncovered, for an hour
- After the boiling, cover the pot, reduce heat and simmer for 2 hours.
- Once the simmer is done, feel free to let it cool a little. Strain the mixture through a cheesecloth and squish out the apple chunks as much as you can. Then once the mixture is strained you can drink or can.
Let me state, that I’m doing some rebel canning on this one as I did not check what FDA says and that’s ok with me. So what I did to can was pour the liquid into quart jars, place lid on and then canned for 7 minutes. Then removed from canner and let them cool on the counter for 24 hours.
I personally am doing this for the first time and this is what I found from multiple recipes. So yes it may be rebel canning but I also am ok with that. You decide if you are ok with that.
We are keeping this on hand for drinking but also I see so many apple cider desserts that mid winter, I’m craving some yet it’s not apple season. After doing this recipe, I fully get why apple cider cost a little bit of money. To which, I’m really ok with how much I spent making some for ourselves. I ended with about 12 quarts and only spent about $7 for the entire thing!!! I’ll take it!!! We also did like 5 batches. So let me buffer that!!! We will be drinking this hot and cold during the winter!!
