Pumpkin Whoopie Pies
Ingredients:
2 eggs
1 cup light brown sugar
1 cup sugar
1 cup vegetal oil
3 cups flour
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/4 tsp salt
2 cups Pumpkin
Cream Cheese Icing:
1 pack cream cheese, softened
1 tsp vanilla
Dash of salt
2 cups confectioners sugar
2 Tbsp butter
- Beat eggs and sugars together. Add in oil and pumpkin
- Then add in the dry ingredients and mix
- Drop by teaspoons onto cookie sheets.
- Bake at 350 degrees for 10-12 minutes
- Cool and then add filling to make sandwich cookies
For the Icing
- mix together cream cheese and butter
- Add in vanilla and salt.
- Add in confectioners sugar.
This recipe is wonderful to make a massive batch and freeze. I like to do a few rounds at once, basically a massive baking day, and then put them into the freezer. Then you just need to let them thaw out and you can eat them! As you can tell I like being able to have different baked goods in the freezer ready to go and this is one of my favorites. My kids are obsessed with these so its a must have at all times.
Now I try to keep my baking of these to the fall time but sometimes you’ll find me making them in the spring too. But I definitely love having them on hand for Thanksgiving as well. We are actually an apple loving family but I will always, always need to have some of these Pumpkin Whoopie Pies on hand! Also let me add this recipe is from my grandmother. This is a PA Dutch type recipe and we all absolutely love having these year round!
